Chocolate making class at the Chocolate Museum

 On the first Friday of my summer holidays, I went to a chocolate making class at the Chocolate Museum in Brixton.

The Chocolate Museum is a small cafe with chocolate making classes and there is a tiny museum downstairs describing the history of chocolate in England.

Once everyone had arrived, we went to a table while the teacher Alessandra told us what we would be doing.

Firstly, we got a plate with white and milk chocolate ganache on it and we had to break off small bits and roll them into balls to make truffles. We had to be really fast making the ganache into the balls as they melted very quickly in our hands and made them sticky.
Then we got a slice of fudge and some tiny cutters and cut out interesting shapes quite quickly before the fudge started to melt.

While the fudge and truffles were setting in the freezer, we learnt to temper the coveture chocolate.
We had to cool melted chocolate to exactly 32 degrees Celsius, by stirring the mixture and adding chocolate buttons to it several times to help cool it down.

Finally it was the fun part!
Our fudges and truffles were taken out of the freezer and we decorated them by dipping them in the coveture and coating them with sprinkles and chocolate flakes.
It was tricky taking out the truffles and fudge out of the coveture, because Alessandra said we shouldn't put our fingers in the coveture otherwise it would heat up again.
We made three of our truffles into lollies by placing sticks in them.

Once we had finished Alessandra placed them in the fridge once more to set again and once they were done we could take them home.

I really enjoyed my chocolate making class, it has inspired me to make truffles at home.
They tasted delicious and I would recommend this class for chocolate lovers.
